Reflection from Fieldtrip
1. From the trip I found:
· Dry food (frying, tanning)
· Refrigerate food (steam)
The dry food I saw is crispy, and can be seen physically that the food itself is stiff and the texture is hard. Since the method itself is getting preserved food dry by frying or tanning. For refrigerate food, the food would be more fragile, and easier to chew. It uses steam to make refrigerated food, and can be stored in refrigerator. It also able to serve it in cold temperature, just like Bolu. After finishing the food it will be package, so it can last longer. Seeing the drying food it is known that it can last long in a package and can remain tasty. So the dry food is more efficient than the frozen food, because dry food can retain the taste in packaging. While frozen food should be storage even though it is packed.
Based on research dried foods keep well because the moisture content is so low that spoilage organism and virus cannot grow. It is also prove these methods do a better job of retaining the taste, appearance, and nutritive value of fresh. One of the biggest advantages of dried foods is that they take much less storage space than canned or frozen foods. In my research frozen foods are depending on cold temperature, and fridge is recommended. However, the fridge is also the slowest way to thaw food. This method is ideal for meats, dairy and anything else usually stored cold. Overall, the dry food method is easier and simple to use. The frozen food is depended in cold temperature even though it is packaged, while dry food doesn’t.

2. By learning from this, it helps me in the future that it can help me to use the methods from on preserving food. Because the food can be use also for travelling since it is packaged and can last long. So it would be really helpful to be used in the future. It also helps me some idea of methods on doing this project. Such as strawberry that can be dried, freeze, and sugaring. Or seafood like, shrimp which could be dried into a sambal. Being additive food of spices. But I would maybe pick strawberry using sugaring method. Which involve freezing method, than the strawberry can be sweeten by chocolate, sugar, and more. From the new learning methods both from fieldtrip and research I learned it helps me to use the methods, such as the freezing method, by thawing it that can be used on the project. So it could help me to success in the project.
3. Eating the Medan food felt different because I’m not used of their traditional foods which are spicy. It felt hotter in my mouth because of the spiciness, in my opinion it is one of the spiciest food. Until it gave me tears since it is too hot, and I don’t eat spicy food with this level. Out of 5 levels I can only eat level 1 of spiciness and in Medan it is level 5. Emotionally after eating the Medan foo I felt proud eating the spiciest food I ever tried, however it is painful. But I’m still proud of myself for eating it and I honor and the Bataknese people able to eat this kind of spicy food almost everyday
4. The food I enjoy is the Medanese crispy pork I ate in the last day. I enjoy because I like the hard texture that gives the crispiness of the food. It is not spicy yet the taste from the crispiness from the skin it’s very tasty. Since I like pork also, it makes the taste for me better. The food is more too salty and salty is my taste of food. But overall the crispiness is the reason why I enjoy it.
5. The food I dislike is the Medanese fish with spicy sauce mixed with green chili. This is the spiciest food I ever tasted. Since I don’t like spicy food, it would not be my appetite. When I tasted the food it was really hot in my mouth and I can’t taste the food, but I can only taste the spiciness in my mouth, because it’s too spicy. Too much spiciness make the food less taste, so I prefer non spicy food.
6. The action I would do differently from this experience would be taking more advantage on dry food. Since dry food can last longer on retaining their taste anywhere, so I would rather buy more dry food. I should also being more pay attention on the visual or presentation of the food, so I know if it’s spicy or not. When I ate the fish, I didn’t pay attention on the sauce, I thought it was a normal sauce that makes it more delicious. But after I ate it I took a closer look and it turns out there are some seed of green chili. So from this experience I could take a lesson for the future.
7. Sugaring and freezing would probably the method I’ll use on my next project about the food preservation. I already know the basics of freezing but I might need to do more research on thawing, because most frozen foods are thawed. The methods of thawing include fridge, cold water, and microwave. The fridge is the safest and easiest way to thaw food, however it is the slowest way to thaw food. Cold water is as safe as thawing food in the fridge, and it is also faster than fridge. This method is great for fruit, meat, cooked meals, sauces, and vegetables. Last is the microwave, the fastest method of thawing, however it could give most uneven result. Such as, the food cooked outside while the inside is still frozen, and the microwave usually dries out foods. So I prefer using the cold water method because it’s safe and fast. It is also capable working with fruits (strawberry). The next method is sugaring, which also capable working with fruits which dehydrates the foods. The skin of certain fruits is cooked in sugar until it crystallize and then they are stored in a dry environment. But the risk that sugar itself could attracts moisture. I think I’m capable of using both method on a strawberry for the next project.
